10:00 am Seminar: Buono da bere, buono da pensare. Quale futuro per un vino di qualità? Guests include Tiziano Gaia (Slow Food Editore), Giampaolo Motta (Producer), Roberto Stucchi Prinetti (Producer), Vittorio Fiore (Enologist), Saverio Petrilli (Enologo), Antonio Attorre (Journalist and writer), Ernesto Gentili (Editor of Guida Espresso), Giuseppe Liberatore (Director of the Consorzio Chianti Classico) as well as the president of Slow Food Italia, Roberto Burdese.

4:00 pm Presentation of the book Buono, Pulito e Giusto. Principi di Nuova Gastronomia, by Carlo Petrini, International President of Slow Food, with contributions by Carlo Bogliotti (Einaudi Editore). Roberto Burdese, president of Slow Food Italia, and Carlo Bogliotti will be present.

5:00 pm Bread, wine, sugar and….the traditional Florentine snacks: open tasting, care of the Apicius cooking school.

5:15 pm Awards presentation for the winners of the Benemeriti della Viticoltura from the Florentine region.

5:30 pm Presentation of the book, “Florence and its surroundings from another point of view,” by Veronica Ficcarelli (Giunti Editore). Followed by a tasting of ribollita and pappa al pomodoro, care of Trattoria Il Francescano.

5:45 pm Workshop “Enological treasures to save”: tasting of some small batches of wine made from rare varieties of grape such as, Foglio Tonda, Orpicchio, Vicetro, Colorino and Caniolo del Valdarno. Held in collaboration with the Cantina Mannuccia Droandi and the C.R.A. Istituto Sperimentale di Arezzo. The tasting will be preceded by a guided visit to the Archaeological Museum by the director Marco De Marco.

4:30 pm Round table discussion: Da arcigola a Terra Madre: i 20 anni di Slow Food a Firenze; incontro con gli artefici dell’associazione in città. Incorporated into the program will be the presentation of the project for the appreciation of traditional schiacciate da forno bread from Florence and the Florentine countryside.
